Ingredients for 4: 6
zucchini 2 tbsp olive oil
70 g crumbled feta
1 tsp grated lemon zest 1 clove garlic
chopped 1 tbsp lemon juice 1 tbsp
mint chopped zucchini
Expand into quarters lengthwise and overlap into two or three.
Heat 1 tbsp olive oil in large skillet and cook the zucchini for 4-5 minutes . When they are tender and browned, arrange on a platter. Crumble the feta over the courgettes, mix the lemon zest, chopped garlic and lemon juice in a bowl, stir in 1 tbsp olive oil, whisking with a fork zucchini and coat with sauce. salt and pepper, stir and sprinkle with fresh mint chiseled.
